*my rice is dyed green for St. Patrick's Day*
1 C. glutinous rice (soaked for 30 minutes in cold water) - you can get glutinous rice at any Asian market, or if you can't find it, use short-grain Jasmine rice.
1 cup coconut milk
2 Tbls. sugar
pinch of salt
2 large ripe mangoes (optional)
Drain rice and rinse thoroughly. Place in a pan with coconut milk, sugar, and salt. Bring to a boil and simmer, stirring occasionally until the rice has absorbed all the coconut milk and is very soft. Transfer the rice to a steamer set over a pan of simmering water. Cover and steam for 15 minutes.
Peel and Cut the mangoes into cubes. Serve.
