Best Pancakes Ever...Seriously (by Guest Chef Brook)

Best Pancakes Ever

2 Cups flour
2 tsp. baking powder
1 Tbsp sugar
1 Tbsp brown sugar
2 eggs, separated
2 cups milk
1/2 cup ricotta cheese
1/2 Tbsp salt
2 tsp vanilla
Combine dry ingredients. Separate eggs saving whites to be added later. Add the rest of the wet ingredients to the egg yolk. Add dry ingredients, and mix well. Beat egg whites and lightly fold into batter. Fry on a lightly greased frying pan or pancake griddle. These pancakes are delicious with a fruit syrup and fresh fruit. This recipe makes about 20 3 to 4 inch pancakes so I half the recipe for my family.
