Salsa de Repollo

Salsa de Repollo literally translates to mean Cabbage Sauce.  That's enough to turn me away.  I'm not a huge fan of cabbage, but I can tell you that I LOVE this.  It is cool and crisp, and adds a nice, fresh crunch on tacos, burritos, pupusas, and salads.  Make it ahead of time and let it marinate in fridge for at least 30 minutes.  Serve with all your favorite Mexican dishes, or atop a dinner salad.

In large tupperware, add all ingredients below.  Top with lid, and set in fridge for at least 30 minutes.  Keeps for up to a week in the fridge.

1 small cucumber, finely shredded
1/2 head green cabbage, finely shredded
3 TBS. vinegar
1 TBS. lime juice
1 can green chiles (optional...use to taste)
1/2 tsp. ground oregano
1-2 tsp. salt
