*this is my before photo, it seemed prettier before the apples got all steamy*6-8 small Granny Smith apples, peeled and diced
1/2 cup sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Place apples in a greased 1-qt. baking dish. In a small bowl, combine sugar, cinnamon and vanilla; mix well. Sprinkle over apples. Cover and bake at 350 degrees F for 50-60 minutes or until apples are tender. Uncover and mash with a fork to your desired consistency - I like homemade applesauce to be chunky. Serve warm.
