Chunky Applesauce

Welcome, welcome - apple season!!  Let the picking (and the baking and the eating) begin! This applesauce will make your house smell fantastic, and it will make you never want to buy storebought again!  They are delicious alone, or served with a pork chop or BBQ chicken.
*this is my before photo, it seemed prettier before the apples got all steamy*
6-8 small Granny Smith apples, peeled and diced
1/2 cup sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
 
Place apples in a greased 1-qt. baking dish. In a small bowl, combine sugar, cinnamon and vanilla; mix well. Sprinkle over apples. Cover and bake at 350 degrees F for 50-60 minutes or until apples are tender. Uncover and mash with a fork to your desired consistency - I like homemade applesauce to be chunky. Serve warm.
