Sesame Pork Loin

All I have to say here is: "Hello meal, where have you been all my life?" - stay tuned for the Swiss Potato Casserole.  Delish!  I will make this again - and soon!

This pork loin is great for guests, or perfect for a nice Sunday dinner w/ great leftovers.  I served it with fresh steamed green beans & carrots, Swiss Potato Casserole, and warm dinner rolls.

1/2 c. soy sauce
2 cloves garlic, minced
1 tsp. ginger or 1 TBS fresh ginger, grated
1 TBS sesame oil
1-1.5 lb. pork tender loin (I used the ones from Costco)
1/4 c. honey
3 TBS. brown sugar
1/4 c. sesame seeds

Combine soy sauce, garlic, ginger and sesame oil in large plastic zipper bag.  Mix well, add tenderloin.  Marinate at least 2 hours (I did mine overnight). Combine honey and brown sugar in shallow bowl.  Remove pork from marinade and pat dry.  Roll pork in honey mixture and then roll in sesame seeds.  Roast in shallow pan at 375 for 25 minutes (or until meat thermometer hits 160).
