Maple & Mustard Glazed Pork Chops

4 pork chops
1/4 c. sweet & spicy mustard
1/3 c. pure maple syrup
2 shallots, finely chopped
2 cloves garlic, finely chopped
2 TBS. white cooking wine
olive oil
salt & pepper

Preheat broiler on high.  Combine mustard, syrup, shallot, garlic and vinegar in blender and blend until smooth.  Reserve half of the sauce in separate bowl for serving.  Rub pork chops with olive oil, salt and pepper.  Place chops on broiler pan and brush with sauce.  Broil 4-6 minutes (about 5 inches from the heat element).  Turn chops over and broil an additional 4-6 minutes (do not overcook pork chops! if needed, use thermometer and cook until internal temperature reaches 145 degrees F in the thickest part).  Remove from oven, tent with foil and let rest for 5 minutes.  Serve with remaining sauce and Aromatic Herbed Rice.
